Sweet Potato Sausage Egg Hash
Build a better breakfast with a perfect pairing of smoked sausage and sweet potatoes for an undeniably delicious meal!

(13.5 ounces) JOHNSONVILLE® Smoked Rope Sausage or (14 ounces) JOHSONVILLE® New Orleans Spicy Smoked Sausage Links, cut into coin-slice pieces

medium sweet potatoes, chopped

small onion, chopped

cloves garlic, minced

butter

Salt and pepper, to taste
Directions
Preheat oven to 425°F.
In a large oven proof skillet, cook and stir onions and garlic in butter over medium-high heat until onions are translucent; about 5 minutes.
Add sausage and sweet potatoes to skillet; stirring occasionally for 8-10 minutes until potatoes are tender. Cover skillet with a lid while cooking.
Make six indentations in mixture for eggs; crack six eggs over sweet potato hash.
Place skillet in hot oven and bake 10-15 minutes or until eggs are set.
