Sausage Bruschetta

French baguette or Italian bread

olive oil plus more for brushing

chopped fresh basil

balsamic vinegar

garlic, minced

chopped Roma tomatoes

shredded Parmesan cheese

Directions

Cook sausage according to package directions. Cool slightly; cut into 1/4-inch bias-slice pieces.

Preheat oven to 450°F.

In a bowl, whisk together the 3 tablespoons oil, basil, balsamic vinegar, garlic, salt and pepper. Stir in tomatoes; set aside.

Brush one side of bread slices with oil and place oil side down on a baking sheet. Bake for 5 minutes or until golden brown.

Remove bread from oven and turn over. Top with the sausage, tomato mixture and Parmesan cheese.

Bake 2-3 minutes longer or until cheese melts.
