Sausage Breakfast Skillet with Tomatoes & Basil
Leave it to Johnsonville to come with a great way to spick up breakfast with this skillet meal filled with delicious sausage links.
- 1/2 package
red skinned potatoes, cut into thin wedges
Rosemary, dried or fresh
tablespoons olive oil
2 - 4
eggs, fried or scrambled
shredded Gouda cheese
thinly sliced fresh basil leaves, to garnish
In a bowl, combine the potatoes, onions, rosemary and oil.
In a large skillet, cook the potato mixture over medium heat, turning potatoes occasionally to brown both sides; about 5 minutes.
Add sausages to pan and cook alongside potatoes; 10-15 minutes. Turn occasionally to brown.
Add tomatoes to potato mixture; stir to combine. Heat through; about 3 minutes.
Use a rubber scraper to push ingredients to the outside pan edges; leaving a space in the center to cook eggs.
Crack eggs in skillet and cook to desired doneness.
Remove from heat.
Sprinkle with cheese and basil.
