Minestrone Soup with Italian Sausage
Yum! My picky eaters give it a thumbs up!.This recipe was hearty and flavorful. I made a few modifications using what I had on hand: I used tomato sauce instead of paste, reconstituted the broth from bouillon, and used 2 tablespoons of dried Italian Seasoning instead of the fresh and dried spices, and left off the salt. Other than that, I followed the recipe as published. I served it with yeast rolls and garnished with Parmesan cheese. It does make a large pot full, and my family of four (two adults and two small children) ended up with a lot of leftovers. Next time I might try to freeze a portion or cut the recipe in half. But, I will be making this again! — Carldine
