Holiday Breakfast Casserole
Make-ahead easy! This casserole is everything one loves in a breakfast sandwich all in one pan.

English muffins, cut 1-inch cubes

shredded Cheddar cheese

chopped red bell pepper

Directions
Cook sausage according to package directions. Cool slightly; cut ¼-inch coin-sized pieces.
In a greased 9 x 13-inch baking dish, layer half English muffin cubes and half cooked sausage. Repeat layers.
Drizzle with butter and top with the cheese, onions and red peppers.
In a large bowl, combine the eggs, milk, salt and pepper; pour over casserole. Sprinkle with bacon. Cover and refrigerate overnight.
Remove from refrigerator 30 minutes before baking. Uncover and bake at 350˚F for 45-50 minutes, or until a knife inserted into the center comes out clean.
Let stand 5 minutes before serving.
