Hasselback Memphis-Style Sausage Burger
Congratulatons to Brent Little! He is the 2021 Titanium Tongsman Champion in the Johnsonville Titanium Tongsman Contest for his tasty sandwich recipe made with Johnsonville Smoked Rope Sausage and Johsonville Sausage Strips that may be served with a favorite Memphis-style BBQ sauce.


Ingredients

strips JOHNSONVILLE Original Sausage Strips™, cut in half

packages (13.5 ounces each) JOHNSONVILLE Smoked Rope Sausage, use U portion of sausage

Memphis-style BBQ dry rub
-
Memphis-style BBQ sauce
-
5
large sesame hamburger buns
-
Skewers & toothpicks
-
Avocado Oil Spray
Cheese Filling
-

tablespoon ghee or avocado oil, to season pan
-
1-2
jalapeños, remove membranes and seeds

package (8 ounces) cream cheese

1/2
packet Boursin Garlic Fine Herb Cheese seasoning

ball (4 ounces) fresh mozzarella

package (6 ounces) sharp Cheddar cheese

Memphis style BBQ dry rub

Directions

Preheat grill to 300°F.

Sprinkle Memphis-style BBQ dry rub on Sausage Strips.

Place on grill, cooking until desired crispiness; flipping occasionally.

Remove strips from heat and place in a 9x13-inch baking pan.

Sprinkle with Memphis-style BBQ dry rub; set aside and keep warm.
Hasselback Sausage Preparation

Using a paring knife, make small slots into sausage every quarter of an inch. Be careful to cut no more than halfway into the sausage. Use a skewer to help ensure desired cut length is achieved and uniform.

Use 11-inches of sausage; the most curved part of the rope link, to achieve a perfect round circle and connect ends with a toothpick.

Generously sprinkle Memphis-style dry rub on sausage before grilling at 300°F. Flip the sausage occasionally using tongs during the cook.

Once desired color is achieved, spray each with light coat of avocado oil, or other high-temperature oil.

Sprinkle with BBQ dry rub & remove toothpicks.

Note: Leftover sausage may be used in a Johnsonville Andouille and Chicken Gumbo Recipe.
Cheese Filling Preparation

Grill jalapenos; once charred, finely chop.
-
In a cast iron skillet on the grill, melt ghee or avocado oil. Mix and melt all cheese filling items together and add chopped jalapenos…in Tongsman fashion, use a set of tongs to mix ingredients together.

Add Memphis-style BBQ dry rub to taste.
Sandwich Preparation

Layer 2 sausage strips and hasselback smoked rope sausage ring on bun bottoms.
-
Divide cheese filling into five portions and place in center of the ring.

Drizzle with BBQ sauce.

Add sesame bun tops.
