Crispy Rice Smoked Sausage Casserole

Directions
Preheat oven to 375˚F.
In a bowl, mix together the rice, egg, yogurt, curry, cinnamon, salt and pepper, until blended.
Pour butter into 8x8-inch baking pan. Spread half of rice mixture into baking pan bottom. Layer sausage pieces on top of rice.
In a skillet, cook and stir zucchini and mushrooms over medium heat in olive oil until lightly browned. Layer vegetables over sausage; top with remaining rice mixture.
Cover with foil and bake for 45 minutes.
Let sit 10 minutes and serve.
