Chili Garlic Stuffed Peppers
- 1 package
red, green or yellow bell peppers
(10 ounces) frozen chopped spinach, thawed and squeezed dry
garlic & herb marinara sauce
shredded Italian blend cheese, divided
cloves garlic, minced
crushed red pepper
Preheat oven to 375°F.
In a skillet, cook and crumble ground sausage over medium heat until browned and fully cooked; about 7-10 minutes.
Add the spinach, marinara sauce, 1 cup cheese, garlic and crushed red pepper.
Cut top off each pepper; scoop out pulp and seeds.
Place peppers on a microwave safe plate; cook for 2-3 minutes or until tender.
Fill peppers with sausage mixture; place peppers in a greased baking dish.
Sprinkle with remaining cheese; bake for 20 minutes or until completely heated.
TIP: For a fun appetizer, use mini sweet bell peppers instead of large peppers and omit microwave heating step. Place mini stuffed peppers upright in muffin cups while baking.
