Walking Tailgate Tacos
Everyone at the tailgate party will be walking around and screaming for more chips to eat with the spicy taco mixture that’s filled with Johnsonville® Chorizo Rope Sausage and Chorizo Ground Sausage. Dig in to this craveable party food that can be washed down with a beer!


Ingredients

package (13.5 ounces) Johnsonville® Chorizo Rope Sausage, cut into cube-sized pieces

package (16 ounces) Johnsonville® Chorizo Ground Sausage

medium onions, diced

1/4
cup tomato paste

can (8 ounces) tomato sauce

can (14.5 ounces) petite diced tomatoes

cups beef stock

tablespoons chili powder

tablespoons paprika

tablespoon garlic powder

tablespoon ground cumin

teaspoon black pepper

teaspoon salt

cup shredded Cheddar cheese

cup sour cream

green onions, sliced

Pickled jalapenos, to garnish

Directions

In a large skillet, cook and crumble ground sausage over medium heat until browned and fully cooked; about 7-10 minutes. Remove and set aside; leaving drippings in pan.

In the same skillet, cook and stir rope sausage pieces over medium heat until browned; about 5 minutes. Remove and set aside.

In the same skillet, cook and stir onions over medium heat until tender; about 3-5 minutes.

Add seasonings to onions and toss, cook and stir another 2 minutes.

Add the tomato paste, tomato sauce, diced tomatoes and beef stock; bring to a simmer.

Add sausage to skillet; simmer for 20 minutes.

Open bags of chips; top with chili and garnish with cheese, sour cream, green onions and jalapenos.
