This easy taco tot casserole will please everyone in the family crew---even finicky eaters! Pick the spice level by selecting either Original or Hot Taco Ground Pork Sausage. It’s hearty and tasty comfort food for the win!


Ingredients

package (16 ounces) JOHNSONVILLE® Original Taco Ground Pork Sausage

can (10.75 ounces) cream of chicken soup

can (10 ounces) enchilada sauce

can (11 ounces) corn, drained

can (15 ounces) chili beans, drained

1/2
cup chopped onions
-
2
jalapeno peppers, seeded and chopped

cups shredded Mexican blend cheese

1
bag (32 ounces) tater tots, thawed

Optional toppings: sour cream, sliced jalapeno peppers or green onions

Preheat oven to 375°F.

In a skillet, cook and crumble sausage over medium heat until sausage is browned and the internal temperature is 160°F; about 10 minutes. Drain if desired.

Stir in condensed soup and enchilada sauce.

Add the corn, beans, onions and peppers.

Spray a 9x13-inch baking dish with cooking spray. Spoon sausage mixture into the baking dish.

Sprinkle with cheese and top with tater tots.

Bake until bubbly and tots are browned; about 35 minutes.
