Mexican Street Corn and Sausage
Johnsonville® Taco Ground Pork Sausage or Chorizo and charred corn are blended with mayonnaise, creamy sour cream, lime squeeze, sweet and tangy peppers, black beans and Mexican blend cheese and drizzled with hot sauce for a delectable Tex-Mex side dish.

package (16 ounces) JOHNSONVILLE® Original Taco Ground Pork Sausage or JOHNSONVILLE® Chorizo Sausage

bags (10 ounces each ) frozen roasted corn

can (15 ounces) black beans, rinsed and drained

red bell pepper, chopped

jalapeno peppers, seeded and chopped

Garlic salt, to taste

cup sour cream

1/3
cup mayonnaise

1/3
cup chopped cilantro

1
lime, zest and juice

cup Mexican blend cheese

Cilantro, to garnish

Hot sauce, optional

Directions

In a skillet, cook and crumble sausage over medium heat until sausage is browned and the internal temperature is 160°F; about 10 minutes. Drain if desired. Set aside in large bowl.

In same skillet cook and stir the corn, beans, red peppers, jalapeno peppers and garlic salt until hot; about 5 minutes. Combine with sausage.

In a small bowl, combine the sour cream, mayonnaise, cilantro, lime juice and zest; stir into corn and sausage mixture.

Sprinkle with cheese and cilantro.

Add hot sauce to taste.
