Sausage Wrapped Meatloaf
Always a family favorite, try this easy meatloaf recipe loaded with Southwest flavor that is wrapped with Johnsonville Sausage Strips™ and filled with roasted corn, black beans, green chiles, Mexican blend cheese and taco seasoning.

pound ground beef

cup breadcrumbs

eggs, lightly beaten

cup Mexican blend cheese

1/2
cup roasted corn

1/2
cup canned black beans, drained

1/2
cup ketchup

1/4
cup chopped onion

envelope (1 ounce) taco seasoning

tablespoons diced green chiles

1/2
teaspoon salt
-
1/4
teaspoon ground black pepper

Shredded cheese, chopped tomato and cilantro, to garnish

Preheat oven to 350°F.

On a parchment-lined baking sheet, weave 6 sausage strips in a basket weave pattern. Repeat with the 6 remaining strips and set aside.

In a bowl, combine all remaining ingredients until mixed thoroughly, using hands for best results.

Divide meat mixture; form into two loaf shapes.

Place one meatloaf in center of a sausage strip weave pattern; wrap strips around meatloaf. Carefully lift and turn meatloaf over so strip ends are on the bottom side; repeat with second meatloaf.

Bake 40-45 minutes or until thermometer inserted into the center reads 160°F and sausage strips are desired crispiness.

Sprinkle with cheese, tomato and cilantro to garnish.
