Sausage Strips Breakfast Quesadilla
Take traditional scrambled eggs that everyone loves and create a fuss-free quesadilla that is so tasty when filled with Johnsonville® Chorizo Sausage Strips!
package (12 ounces) JOHNSONVILLE® Chorizo Sausage Strips
Salt and pepper, to taste
(6-inch) flour tortillas
tablespoons butter, softened
cups shredded mozzarella cheese
cup crumbled Cotija cheese
can (4.5 ounces) chopped green chilies, drained
Cook sausage strips according to package directions; set aside.
In a medium bowl, whisk together eggs and milk; add salt and pepper.
In a skillet, over medium heat, cook and stir egg mixture until throughly cooked, but still moist; 5-7 minutes. Set aside and keep warm.
Butter one side of each tortilla; place in a skillet, butter-side down. Layer the two sausage strips, scrambled eggs, mozzarella cheese, Cotija cheese and green chilies.
Top with another tortilla; butter-side up.
Cook over medium-low heat for 1-2 minutes on each side or until cheese is melted; set aside and keep warm. Repeat for additional quesadillas.
Cut into wedges and serve with salsa.
