Sausage and Veggies Fried Rice
This one-skillet meal combines Johnsonville® Salt & Pepper Ground Pork Sausage, broccoli, cauliflower, carrots, scrambled eggs, fresh grated ginger and rice for an easy family dinner filled with protein and veggies.

package (16 ounces) JOHNSONVILLE® Sloppy Joe Ground Pork Sausage

tablespoons sesame oil

small yellow squash, sliced and quartered

cup shredded carrots

1/2
cup broccoli, cut bite-size pieces

1/2
cup cauliflower, cut bite-size pieces

teaspoon fresh grated ginger

eggs

1
package (8.8 ounces) ready rice

Teriyaki sauce, to taste

Sesame seeds, to garnish

Green onion, to garnish

Directions

In a large skillet or wok, cook and crumble sausage over medium heat until sausage is browned and the internal temperature is 160°F; about 10 minutes. Drain if desired. Remove and keep warm.

In the same skillet or wok, cook and stir the squash, carrots, broccoli, cauliflower over medium heat until tender; about 8 minutes. Add ginger; cook and stir for 30 seconds or until fragrant.

Add eggs, stirring quickly to scramble eggs with vegetables

Stir in rice and sausage.

Drizzle with teriyaki sauce. Garnish with sesame seeds and green onion.
