package (16 ounces) JOHNSONVILLE® Garden & Grill Cheddar Broccoli Sausage

pound baby potatoes, quartered

medium carrots, cut ½-inch coin-sized pieces

cup cherry tomatoes

small red onion, quartered and separated into layers

tablespoons canola oil, divided

teaspoon salt

teaspoon pepper

cup chopped fresh parsley

Preheat oven to 450°F.

Line a shallow baking pan with foil; coat with cooking spray. Arrange sausage on pan; drizzle with 1 tablespoon oil and turn to coat evenly.

In a large bowl, combine the potatoes, carrots, tomatoes and onions; drizzle with remaining oil. Sprinkle with salt and pepper; toss to coat. Arrange vegetables on pan in a single layer.

Bake, uncovered, until vegetables are golden brown and tender, and sausage internal temperature is 160°F; about 20-25 minutes. Turn vegetables and links once during the baking time.

Sprinkle with parsley and bake an additional 5-10 minutes.
