Pepper Rings and Eggs with Sausage
This breakfast version of a stuffed pepper is quick and easy for a tasty Keto-friendly meal in the morning or any other time of the day.
package (12 ounces) JOHNSONVILLE® Breakfast Sausage Patties
tablespoon vegetable oil
½-inch thick sweet bell pepper rings
Salt and black pepper, to taste
Halved grape tomatoes, to garnish
In a skillet, cook breakfast sausage patties according to package directions or grill sausage according to directions on a JOHNSONVILLE® Sizzling Sausage Grill PLUS; set aside and keep warm.
In a large skillet, heat the oil; add pepper rings. Cook for 1 minute; turn over. Crack an egg in center of each ring. Cook for 3 minutes; turn over. Cook and additional 2-3 minutes or until eggs are desired doneness; sprinkle with salt and pepper.
Serve peppers with sausage; garnish with tomatoes if desired.
