Ingredients

1 package (19 ounces) JOHNSONVILLE® Fresh Italian Sweet Sausage Links

2 packages (10 ounces) zucchini noodles

2 tablespoons olive oil

2 cups butternut squash, peeled and diced

1 red bell pepper, halved and sliced
-
1 small onion, sliced
-
1 cup chopped kale
-
2 garlic cloves, minced
-
1 can (14.5 ounces) diced tomatoes with basil, garlic & oregano
-
2 tablespoons + 1 teaspoon chopped fresh basil
-
1 1/4 teaspoon garlic salt, divided
-
1 teaspoon oregano
-
Salt and pepper, to taste

¼ cup freshly grated Parmesan cheese

Cook sausage according to package directions. Cut into ¼-inch coin-sized pieces; set aside.

Meanwhile, in a large skillet over medium heat, cook and stir squash in 1 tablespoon oil for about 10 minutes until browned; add pepper and onion. Cook and stir about 10 minutes until vegetables are tender.

Add the kale, garlic, garlic salt, salt and pepper. Cook and stir about 2-3 minutes until kale is wilted. Add canned tomatoes and 2 tablespoons basil; cook until heated through.

Transfer to a bowl and keep warm.

In the same skillet over medium heat, cook and stir zoodles in remaining oil for about 5 minutes until tender. Add remaining basil, oregano and remaining garlic salt.

Top zoodles with squash mixture and sausage.

Sprinkle with Parmesan cheese, serve.
