Johnsonville Three Cheese Italian Style Chicken Sausage Oven-Roasted Pasta Primavera

What you need

  • 1 medium
    zucchini, sliced
  • 8 oz.
    fresh mushrooms, quartered
  • 1 pint
    grape tomatoes, halved
  • 1 medium
    onion, chopped
  • 1 medium
    red or yellow bell pepper, chopped
  • 1/4 cup
    olive oil
  • 1/4 tsp.
    salt
  • 1/8 tsp.
    pepper
  • 1 pkg.
  • 12 oz.
    uncooked Cavatappi Pasta or pasta of your choice
  • grated Parmesan cheese

Preparation

    Preheat oven to 400°F.
  • 2
    In a large bowl, combine the zucchini, mushrooms, tomatoes, onion and bell pepper. Add the oil, salt and pepper; toss to coat.

    Transfer to a greased shallow baking pan. Bake for 30 minutes or until vegetables are tender and lightly browned, stirring occasionally.

    Sprinkle sausage over vegetables. Bake 5 minutes longer or until sausage is heated through.

    Meanwhile, cook linguine according to package directions; drain and place in a large bowl.

    Add sausage mixture and toss. Sprinkle with Parmesan cheese.

I'm a novice cook and this was simple to make and very very good! The flavor is great and it is very filling. It will make many meals! I made some fresh bread with it and it was fantastic. I read another review regarding adding a bit of garlic and I think that would be awesome, along with some summer squash. I will definitely make it again!

I have a dumb question regarding placing the sausage on the veggies and continuing to bake them until heated through....does the sausage cook that fast in the oven?

Yes, the sausage is already cooked through, you just need to heat it up :)

Super easy and great-tasting!

This is a super easy dish to make, and it tasted wonderful! Everyone really liked the taste. The only thing I will do differently next time is use two zuchinni, or perhaps 1 zuke and 1 summer squash, and maybe some italian seasoning on the veggies. This is definitely a keeper recipe!

I made this tonight for my family and it was AMAZING! I made a few modifications (not a whole onion and different noodles). My 2 year old son LOVED this and ate 2 helpings. I will definitely make this again!

Great dinner dish - makes a ton of food!

My husband and I are big fans of oven roasted vegetables and this recipe does a great job of incorporating veggies with substance. I did some modifications - added more salt and pepper (about double what the recipe call for) as it needed a little more spice. I used wheat penne pasta and added both a red and green pepper rather than just one. It also reheats well and will make for many lunches!

This is a great recipe. Very easy and quick. I modified this a bit by adding minced garlic to the veggies for added flavor. Will definetly make again. Just wish the nutritional chart was added for this recipe.

Great with a couple of modifications!

Just made this earlier tonight and I'm stuffed to the gills!I'm not sure if I ever had pasta primavera before,surely never prepared it before but wow is this good!I forgot the grape tomatoes so I just diced some regular ones no biggie.Also added some sliced carrots and after baking added some basil pesto sauce then topped with shredded Asiago,Parmesan and Romano.Was concerned about the zucchini,was not sure if i would like it but it was great.Overall a great recipe I will make again,especially for parties and gatherings.The sausage is fantastic!
