Improved Easy Breakfast Cups. I have been doing variations of this for years. I use pre cooked hash browns. I make 4 servings in a large bowl, cover with saran wrap and refrigerate until morning. Then each serving can be put in individual cups or the whole bowl can be zapped-if you do the whole bowl at once you will have to stir it about every minute. I mix a little hot sauce in mine. - Coat a 12-ounce microwave-safe coffee cup with cooking spray. Add hash browns. Microwave on high for 1 minute.
- In a small bowl, combine the egg, milk, sausage and cheese; pour over hash browns. Stir until blended.
- Microwave on high for 30 seconds. Stir. Microwave 30 seconds longer or until eggs are set. Serve with salsa if desired.
