The link sausage casing was easy to remove, but the breadcrumbs don't really incorporate into the meat the way they do when using ground beef.
When I make meatballs I try to use a light hand while mixing. I broke the meat up good and then mixed it all really good but the end result was little chunks of sausage with a pasty breadcrumb binding.
The meatballs are overly salty even though I used plain bread crumbs. The sausage already has enough salt and adding the parmesan was overkill.
I will try again and use half ground beef and half ground sausage so I can better incorporate the breadcrumbs and cut back on the saltiness. I think hot sausage would be a good choice. I'd add some spices and minced garlic also.
