This refreshing Apple and Sausage Salad has all of the goodness of your favorite sausage without the bun. This recipe uses mixed greens, Granny Smith apples, blue cheese and a honey mustard dressing to give you a light meal that won’t keep you down. For this dish’s hunger-stopping power, we turn to Johnsonville’s Sweet Apple Smoked Chicken Sausage. The sausage pairs well with the salad to create a meal that’s quick, easy and healthy!

Crisp Apple and Sausage Salad

What you need

  • 1 pound
  • 1 tablespoon
    olive oil
  • 1
    Granny Smith apple, thinly sliced
  • 1 tablespoon
    lemon juice
  • 10 cups
    mixed salad greens
  • 1/2 small
    red onion, thinly sliced
  • 1/2 cup
    crumbled blue cheese
  • 1/2 cup
    honey mustard salad dressing

Preparation

    In a skillet, cook sausage in oil over medium heat until browned. Set aside to cool.

    In a small bowl, combine apple slices and lemon juice.

    In a large salad bowl, combine the salad greens, onion, blue cheese and apple slices. Add salad dressing; toss to coat.

Looks like a great tasting salad, I would use goat cheese or chèvre instead of the Blue Cheese for a gluten free recipe...
