Cowboy Sausage ‘n’ Beans

Tired of looking for teeny bits of meat in your bean dish? Well, it’s time to cowboy up with some help from Johnsonville. This recipe takes all the fabulous flavors of the frontier and creates a hearty dish that’ll stop hunger dead in its tracks. Onions, potatoes, baked beans, salsa and chicken broth combine to make a phenomenal base for Johnsonville’s Polish Kielbasa or Smoked Sausage. The sausage provides a great smoky flavor to this meal while giving you big portions of meat that won’t leave you wondering if it’s in there or not.

Cowboy Sausage ‘n’ Beans
What you need
- 1 small onion, chopped
- 1 tablespoon canola oil
- 2 medium potatoes, peeled and cubed
- 1 can (20 ounces) baked beans
- 1 cup reduced-sodium chicken broth
- 1 package (13.5 ounces) JOHNSONVILLE® Polish Kielbasa or Smoked Premium Cooking Sausage, sliced
- 1 cup salsa
Preparation
- 1 In a large saucepan, sauté onion in oil until tender.
- 2 Add the potatoes, beans and broth; bring to a boil.
- 3 Reduce heat; cover and simmer for 12 to 14 minutes or until potatoes are tender.
- 4 Stir in sausage and salsa. Cook 5 minutes longer or until heated through.
