Johnsonville Chipotle Monterey Jack Cheese Chicken Sausage with Southwestern Style Rice

What you need

  • 1 package
    Mahatma® or Carolina® Yellow Rice Mix
  • 1 package
  • 1 teaspoon
    olive oil, divided
  • 1
    red bell pepper, seeded and cut in thin strips
  • 1
    green bell pepper, seeded and cut in thin strips
  • 1 small
    onion, sliced
  • 1 can
    (10 ounces) tomatoes with green chilies
  • 1/4 cup
    cilantro, chopped
  • 1/4 cup
    queso fresco, crumbled

Preparation

    Prepare rice according to package directions.

    Cut sausage into 1/2-inch slices.

    Heat oil in large non-stick skillet over medium-high heat.

    Cook sausage 1 to 2 minutes.

    Add bell pepper and onions and sauté 2 minutes.

Good and easy!

We just whipped this up for dinner and were impressed. Will definitely buy the sausage again! I used half an onion and a small red pepper, and those were the only veggies we added. The Rotel should be drained a bit- I didn't drain it and it was a bit watery, but nothing a slotted spoon wouldn't fix!

excellent flavors, easy to prepare

my whole family gave this one rave reviews. I had to use GOYA yellow rice, which was delicious, and I had to adjust the cooking time…where it says to add in the peppers and onions and cook for 2 minutes, probably went closer to 15, and what a difference in the look, textures, smells…it was wonderful !! with prep time it took me close to an hour til it was on the table. i will definitely make this again !

Very good flavor!

A little difficult finding yellow rice for some reason, but well worth the task. Pretty simple recipe and not a ton of preperation, and the flavors were awesome!
