Johnsonville Chipotle Monterey Jack Cheese Chicken Sausage with Southwestern Style Rice
What you need
- 1pkg.Mahatma® or Carolina® Yellow Rice Mix
- 1pkg.(12 oz.) Johnsonville Chipotle Monterey Jack Cheese Chicken Sausage
- 1tsp.olive oil, divided
- 1red bell pepper, seeded and cut in thin strips
- 1green bell pepper, seeded and cut in thin strips
- 1smallonion, sliced
- 1can(10 oz.) tomatoes with green chilies
- 1/4cupcilantro, chopped
- 1/4cupqueso fresco, crumbled
Preparation
- 1Prepare rice according to package directions.
- 2Cut sausage into 1/2" slices.
- 3Heat oil in large non-stick skillet over medium-high heat.
- 4Cook sausage 1-2 minutes.
- 5Add bell pepper and onions and sauté 2 minutes.
- 6Add tomatoes with green chilies and heat through.
- 7Serve sausage mixture over rice and top with cilantro and cheese.
