    In a large bowl, combine the potatoes, onion and bell pepper. Add the oil, salt and pepper; toss to coat.

    Transfer to a greased shallow baking pan.

    Bake for 40 to 45 minutes or until potatoes are tender and lightly browned, stirring occasionally.

    Arrange sausage over vegetables. Bake 5 to 10 minutes longer or until sausage is heated through.

Very flavorful easy meal!!!

This dish is super easy and full of flavor!!! The hardest part of this dish is chopping the sweet potatoes since they are so hard. My husband and i loved it. The kids wouldnt try it because the sausage was spicy.
