Potatoes, bell pepper and onions are oven-roasted, then roasted some more with slices of Chipotle Monterey Jack Cheese Chicken Sausage.

Johnsonville Chipotle Monterey Jack Cheese Chicken Sausage Potato Hash
What you need
- 3mediumrusset potatoes, washed and cubed
- 2mediumsweet potatoes, peeled and cubed
- 1mediumgreen or red bell pepper, chopped
- 1/4cupolive oil
- 1/4 tsp.salt
- 1/8tsp.pepper
- 1pkg.Johnsonville Chipotle Monterey Jack Cheese Chicken Sausage, cut into 2-inch pieces
Preparation
- 1Preheat oven to 400°F.
- 2In a large bowl, combine the potatoes, onion and bell pepper. Add the oil, salt and pepper; toss to coat.
- 3Transfer to a greased shallow baking pan.
- 4Bake for 40-45 minutes or until potatoes are tender and lightly browned, stirring occasionally.
- 5Arrange sausage over vegetables. Bake 5-10 minutes longer or until sausage is heated through.
