Great summer recipe

Loved this recipe. Nice taste, quick and easy. We substituted mushrooms for the tomatoes. One red pepper was enough for our family of four.

Quick and easy summer dish.

This was so easy to put together. Enjoyed that it used basic items from my fridge and pantry I already had on hand. I felt one pepper was plenty. Might have seasoned the marinade with a touch of cumin or something with some heat. I paired this with a southwest black bean and rice dish. I would make this again.
