For easy, excellent enchiladas, look no further than Johnsonville. This simple recipe has all of the flavors you love with a special kick from Johnsonville’s Andouille Premium Cooking Sausage. Delicious Monterey Jack cheese, refried beans and your favorite enchilada sauce lovingly drench the flour tortillas to make a melty, cheesy and delicious creation that’ll please everyone at your table. The sausage provides the perfect flavor and smokiness to make this dish complete!

Cajun Enchiladas

What you need

  • 4 large
    flour tortillas
  • 8 ounces
    Monterey Jack cheese, shredded
  • 1 can
    (14 ounces) enchilada sauce
  • 1/2 package
  • For Garnish:
    onion and sour cream

Preparation

  • 1
    Preheat oven to 350°F.
  • 2
    Reserve 1/2 cup Monterey Jack cheese.
  • 3
    Spread Andouille sausage and 4 ounces of cheese in tortilla roll.

    Cover with enchilada sauce and remaining cheese.

    Bake in a sprayed baking dish for 10 minutes or until cheese is melted.

description says there is refried beans?

I was looking for a good enchalida recipee, and the description states refried beans, but the ingredients do not call for refried beans -- am I missing something?

Pasta and etc. with a little kick

My husband and I were looking for a sausage brand that was tasty, cost efficient, and versatile. We found it in the Andouille Sausage. We love it for breakfast with eggs or with our favorite pasta and sauce. Johnsonville is definitely one of the greatest sausages I have ever tasted! My family loves it!

Very good

I am from Mississippi, and my mother's family is from Louisiana. We moved to NY and were disappointed to not find Andouille anywhere. I made these for my family, as they love enchiladas and it was the only way to get my kids to try something new. THEY LOVED IT!! THe andouille had just enough heat, but not to much for them!

we love enchiladas ...this recipe was a change up from our normal recipe.......the smokiness from the Andouille sausage was great. I used my favorite enchilada sauce and added some colby cheese. mmmmmmmmmmmmmm so good and so easy!!
