Johnsonville Apple Chicken Sausage with Saffron Risotto
What you need
- 1pkg.Mahatma® or Carolina® Yellow Rice Mix
- 1 - 2/3 cupsapple cider
- 1pkg.(12 oz.) Johnsonville Apple Chicken Sausage
- 1tsp.olive oil, divided
- 1 shallot, minced
- 1/4cupred bell pepper, diced
- 1/4 cupfresh parsley, chopped
- 1/4cupdry white wine
- 1/4 cupheavy cream
- 1/4cupParmesan cheese, grated
Preparation
- 1Prepare rice according to package directions using apple cider instead of water.
- 2Cut sausage into 1/2" slices. Heat oil in large non-stick skillet over medium-high heat.
- 3Cook sausage 1-2 minutes.
- 4Add shallots, bell pepper and sauté 2 minutes.
- 5Add wine and cook until liquid is reduced by half.
- 6Add rice, parsley, cream, and cheese.
- 7Stir until creamy.
- 8Serve immediately.
