While the 'old' Hot Italian had visible fat, it was finer ground that would just melt into the sausage and flavourings, now it is almost 'gristle' that doesn't melt. The old sausage once you had cooked it be it on the grill or in a pan, would be firm when cooked; now now matter how much you cook it it is still 'limp', you can't even melt the fat.
Why destroy a good product?? Is it all about achieving that 'price-point' sweet spot??
What will you need to do to bring back the old recipe, hmmmm?
