Apple Sausage Pancakes

Apple Sausage Pancakes Ingredients

Pancake Ingredients:

  • 2 eggs
  • 1 cup milk
  • 2 cups pancake mix
  • 1 Tbsp. ground cinnamon
  • 3 Granny Smith apples, peeled and grated
  • 1/2 cup pecans, toasted


Topping Ingredients:

  • 1 pkg. (12 oz.) Johnsonville® Brown Sugar & Honey Breakfast Sausage Links
  • 1/4 cup butter
  • 3/4 cup packed brown sugar
  • 1/4 cup honey
  • 2-1/4 cups cubed peeled Granny Smith apples
  • 1/4 cup apple butter
Apple Sausage Pancakes Directions

Place sausage on a 15-in. x 10-in. x 1-in. baking pan. Bake at 375°F for 15-20 minutes or until sausage is no longer pink, turning once; drain and slice into 1/2-in. pieces. In a saucepan, melt butter; stir in brown sugar and honey. Bring to a boil, stirring constantly. Cook and stir for 1 minute. Add apples and apple butter. Return to a boil. Reduce heat; simmer, uncovered, for 3-5 minutes or until apples are tender. Add sausage; heat through. Remove from the heat and keep warm.
For pancakes, in a bowl, beat eggs and milk; Stir in pancake mix and cinnamon just until moistened. Fold in apples. Pour batter by 1/2 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top. Cook until second side is golden brown. Serve apple topping over pancakes. Sprinkle with pecans.
